Step-by-step: how to check meat temperature
- Find the thickest part. Place the sensing area in the center of the food, avoiding bone, fat, gristle and the cooking surface. Follow your thermometer's placement instructions.
- Check thin foods from the side. For thin patties or chops, insert the probe from the side so the sensing area reaches the center.
- Check whole poultry in three places. Check the innermost thigh, innermost wing and thickest part of the breast without touching bone. For separate pieces, check the thickest part.
- Wait for a stable reading. Hold the thermometer steady. Larger or uneven portions may need checks in several spots; do not assume one warm spot represents the entire portion.

- Clean and store the thermometer. Follow the model's care instructions, clean the probe after use and dry it before storage.
Common mistakes to avoid
- Relying on color or time. Neither reliably confirms a safe internal temperature.
- Checking only one spot. Whole birds and irregular portions can heat unevenly.
- Assuming a fixed carryover rise. Temperature changes during resting vary. Do not remove food below its safe minimum in the expectation that resting will make it safe.
- Submerging an IP65 thermometer. IP65 water protection is not an immersion rating. For the Lightyear model, rinse the probe and keep the display and handle out of water.
- Ignoring the instructions. Placement, accuracy checks and calibration differ by thermometer. Follow the manufacturer's method.
